Curley Leaf Kale
FOR THE SOUP
olive oil, garlic, chilli, salt & pepper
FOR THE FLAVOUR!
1. 1 head of broccoli, 1 head of cauliflower, 4 cloves of garlic & a sprinkling of chilli flakes - chop, dice &/or crush then add to pan with enough water to fully cover, adding a large pinch of salt
2. bring pan to boil then add 4 handfuls of kale - stir then simmer for 15 mins
3. take pan off the heat, add a handful or two of pine nuts, another pinch of salt & a sprinkle of pepper - then blend!
4. 2 squeezed limes & a glug of extra virgin olive oil - stir into soup & serve with a grating of parmesan et VOILÀ*!
*I love adding a few extra pine nuts into each bowl with some additional chilli flakes for an extra crunch & kick
