FOR THE PESTO
any delicious gluten free pasta, courgettes, oil, salt & pepper ... & Parmigiano-Reggiano
1. 1 cup of brasil nuts & 1 cup of pines nuts - CRUSH!
2. Add a handful of basil & a handful of rocket to the fine nut mix, with a splash of oil, pinch of salt & pepper & one avocado - blitz, bend & set aside
3. Courgettes - slice, season, oil & fry
4. Boil your gluten-free pasta, with oil & salt, then drain
5. Combine pesto & pasta with a sprinkle of cheese...DEVOUR!
Delicious as a side for many or a main for few - seriously tasty broccoli!
